Our Wedding Cakes are made to our celebration cake recipes with muscovado sugar, double sifted flour, butter and almonds. Each cake contains glace cherries, plump raisins and sultanas all steeped in Brandy or Sherry. We can also add black treacle, cinnamon and mixed spices to make for a rich, traditional taste to the cake. Once baked, the cakes are then brushed with Brandy or Sherry, wrapped and left for about a month to allow the delicious flavours of the alcohol and spices to mature.
If you prefer a lighter fruit cake, then we use our Vanilla Vodka recipe which contains plump raisins, sultanas, cherries and cranberries all steeped in Vanilla Vodka. This is a much lighter, but still sumptuously gorgeous tasting fruit cake that doesn’t have the dark, rich, treacly taste of traditional fruit cakes.
For an even lighter cake, the top tiers can be made of vanilla, chocolate, lemon or coffee sponge.
Our fruit cakes are covered with a thin layer of marzipan and are then iced with a soft sugar paste.
We like to ensure that only the best quality ingredients make their way into our cakes, which include free range eggs and wherever possible organic and Fairtrade goods.
